Perk up your iced coffee and spring with these 5-layer mocha cubes

3 cups black coffee, cold
3 cups half & half or I use Sweet Italian Creamer
1/2 cup chocolate milk

  1. Fill large, square ice-cube molds (such as Tovolo's King Cube tray-Amazon), with a thin layer of coffee & freeze - at least 2 hours. Once this first layer has frozen add a layer of creamer or half & half and freeze. Then add a thin layer of chocolate milk, freeze. Repeat the process with milk and a final layer of coffee, filling to the top.
  2. To make the drink, pour chilled coffee & cream over the ice cubes.
  3. You can also add some Kahlua or Baileys — and the cubes will melt into the most delicious iced coffee ever!
  4. If you want to take it to the next level add a little sweetened condensed milk to the top. Oh My!!

I love iced coffee in the afterno...

potato soup

1 stick butter
1/2 c. onion (grated)
2 lb bag Ore-Ida Diced frozen Hash Brown Potatoes, thawed
1 can cream chicken soup (I use the one with herbs)
1 cup half & half
1 cup grated sharp cheese & extra for the top
4-5 cups water
Toppings: bacon, cheese, chives

Sauté onion in butter until translucent, add other ingredients ( I use 4 cups of water) & simmer for about 30 mins on low heat, (try not to stir too much it breaks down the potatoes) add salt & pepper (I use white pepper) to taste. Serve and top with toppings or just crackers ~ it is yummy.

This is my Aunt Hazel's Potato Soup. She was the Queen of Entertaining and making everybody feel welcome & loved. I sure do miss her.
